At IDEA Lab: two sessions on ice cream and pastry techniques with Chef Gianni De Lucca, with a special focus on Christmas creations.

At IDEA Lab, we welcomed our partners Prime Pastry, who came from Greece for a training program focused on pastry and ice cream. The demonstrations were led by Chef Gianni De Lucca.

The first day focused on semifreddi, from classic recipes to modern creations, with particular attention to holiday specialties. The second day was dedicated to ice cream, covering bases, the best ingredient combinations, and sugar-free variations.

Both sessions offered the opportunity to deepen knowledge of techniques and raw materials, sharing new approaches and production methods.

An international experience at the heart of IDEA Lab

The workshops strengthened not only technical skills but also the vision that drives IDEA Gelato. We aim to support the growth of professionals, placing knowledge and connections at the center.

The presence of the Prime Pastry team made both days even more dynamic, highlighting perspectives and specific demands from the Greek market.
